
I wanted to share with you a really quick, easy and restaurant worthy recipe that we made up this week that was too good to keep to ourselves. My pictures might not be fancy… I jumped up and took a couple photos before my food got cold and dug in!
Recipe:
-Rice – Regular old plain rice made up with a little salt at the end
-Tilapia – (I use the frozen tilapia you can buy bagged at Wal Mart, it is delicious.)
I seasoned the tilapia with Cajun Seasoning on both sides and then added the fish to a hot skillet with melted butter, about 2 tablespoons. I put the lid on and poached the tilapia in the butter and its own liquid for 3 minutes. I then flipped the fish and left the lid off. I cooked it for another 3 minutes then removed the fish from the heat. – Your cooked fish should be soft and flaky.
-Squash –
I made the squash dish a couple days ago and it was inspired by Prischilla’s Zucchini Casserole. I completely changed it but it is where I got the idea from.
Hot pan – olive oil, saute onions and garlic. Add the sliced squash. Simmer for 5-7 minutes. [I sliced 2 squash, used one small onion and 2 cloves garlic] After that I added an 8 ounce ball jar of homemade rustic tomato sauce. Then I added some basil from a tube. [It is a basil paste that I keep in the fridge that is super handy to have on hand.] Then I let the food simmer away on the stove top for about 10 minutes to reduce the amount of liquid in the pan. Finally I added grated parmesan on top and let it melt naturally on the squash. Scrumptious on its own.
For plating I scooped rice on my plate added the squash and the tilapia and some more parmesan. Easy, and pretty healthy in my opinion.
