
I love making casseroles. But the thing with casseroles is, they are usually tasty for the all the fatty buttery cheesy reasons that make them delicious. They have a time and a place, especially for cheap meal prep for an entire week.
But, what if I were to say to you there are other ways to enjoy the idea of a casserole…
I present to you the Spaghetti Squash Bake! Now for this bake, imagine that delicious casserole meeting up with all the flavors that make a BBQ Chicken Pizza delicious. This might blow your mind, but you could enjoy both of those worlds, at the same time, and not feel carbo-loaded after.

Ingredients
- 1 spaghetti squash – roasted and shredded
- 2 chicken breasts – cooked and shredded
- 1 purple onion – sliced
- butter
- BBQ Sauce
- Shredded Cheese of your choice
Directions
Roast your spaghetti squash – follow the instructions in this post if you do not know how. Mix shredded spaghetti squash with bbq sauce and create a flat layer on the bottom of your casserole dish.
Cook your chicken – for an all around flavor – bbq the chicken breasts and then shred or chop them. Layer on top of the squash, drizzle a good amount of bbq sauce and a layer of cheese.
Saute your purple onion in butter – so good.
Now layer the onions top of your chicken layer.
Now add more bbq.
And more cheese. Of course.
Cover with foil.
Bake at 375F for 30-40 minutes – until everything gets all happy together
Boom. You are done and it is so delicious. Enjoy <3
*NOTE* — You can easily make this paleo-friendly by omitting the cheese and cooking the onions in oil. Easy Button.
